Cherry is the fruit of the interbreeding of fresh, homemade cherry with wild, sour varieties. Cherry is rightly called noble fruit, due to the intrinsic properties of the fruit. It is believed that wild species cherries come from the west part of Asia. Sometime before 2500 years they have begun to grow in Turkey and Greece. The Romans knew the cherry and thanks to them cherry is spread almost all over Europe.

In Croatia, the cherry is grown in two production areas: the northern mainland and the Mediterranean area and in Dalmatia. In Dalmatia is grown sour cherry, which is characterized by special quality. Until 1971 in Dalmatia was produced more than 12,000 tons, and today is the production of less than 3,000 tons.
